The Malaysia Truly Asia Cuisine Showcase Makes Mouths Water

Kuala Lumpur, Wednesday 31 October: The Malaysia International Gourmet Festival displayed a host of exciting new flavours this year with the Malaysia Truly Asian Cuisine Showcase, which was held at the One World Hotel on 31 October 2007. The showcase was opened by Guest of Honour YBhg Datuk Dr Victor Wee, Secretary General of the Ministry of Tourism.

The showcase required the Festival’s Master Chefs to use their unrivalled local expertise and create a menu that combined traditional ingredients and influences of Malaysian and Asian cuisine, and at the same time, had global appeal. Master Chefs presented the ‘piece de resistance’ of their menus at the showcase, for judging by a group of renowned food experts and writers including Cheong Liew (Chairman of judging panel), Chef Tim Pak Poy (The Wharf Restaurant, Sydney), Amy Beh (celebrity chef, food columnist, author and culinary consultant), Chef Johari Edrus (President of the Chefs Association of Malaysia, Jeremy D.C. Diamond (President, International Wine and Food Society, Kuala Lumpur) and Julie Wong (Editor of The Star’s Flavours Magazine).

Three sets of each dish were prepared for display, tasting and evaluation. Judging criteria for the dishes on display was broken down into categories including Presentation, Consistency, Flavour and Texture. Chefs also prepared for each menu, a description and a story explaining the source of its inspiration.

As well as representing all the races of Malaysia, the Master Chefs of the Festival represent such diverse areas of the world as France, Germany, Switzerland, India, Italy, Sweden, Japan, Canada and Thailand. Given their various multinational palates and experiences, the range of flavours and stories of inspiration displayed at the showcase were outstanding. The diversity and uniqueness found only in Malaysia provided the foundation of almost all menus and stories presented by the chefs.

The 5 most creative menus and 5 most creative signature dishes, will be announced and presented with Awards of Excellence at the MIGF Grand Finale Dinner on 3 December. The overall winning chef will be crowned ‘The Most Innovative Chef of the Malaysia Truly Asia Showcase 2007’

All creations from the showcase will be included in a book published by Festival Partner, Malaysia Kitchen, featuring the chefs, photos and description of the dish and the story behind it. Malaysia Kitchen is a Government initiative which aims to increase the number of Malaysian restaurants in the world from a current count of 300, to 3000 by the year 2010.

Says the Malaysia International Gourmet Festival Organising Chairman, Dato’ Steve Day, “We want the showcase to help create an entirely new range of Malaysian gourmet cuisine that can become mainstays of Malaysian restaurants overseas”.

“We want to put Malaysian fine dining on par with the greatest gourmet cuisines in the world.”
